Generally beer and whiskey - water too.Cocktails weren't the sort of thing you'd find in a remote area - exotic juices were pretty much unheard of in frontier country.
Sarsparilla, a soft drink similar to rootbeer, was not uncommon.

Pasteurization was not discover until the 1880's near the end of the Wild West era. The saloons did serve beer, but it was served warm, forcing patrons to drink fast, thus making liquor the alcohol of choice.According to "Legends of America" they would have drank primarily hard liquor, such as bourbon or rye. Also popular was Cactus Wine, made from a mix of tequila and peyote tea, and Mule Skinner, made with whiskey and blackberry liquor. The house rotgot was often 100 proof, though it was sometimes cut by the barkeep with turpentine, ammonia, gun powder or cayenne.
The "mixers" of the era would include lime and lemon and any other fruit available to the region.
