Beaujolais is traditional with salmon but, considering the glaze, your idea sounds pretty good. I'm not a great believer in cocktails before a good meal. They tend to dull the palate.Answer #2:

i don't normally recommend cocktails with meals, but i would do a nice dry gin martini

Outback. The salt thing I don't understand. The fish I ate was pink, not

I would serve a Sauvignon Blanc or a Pinot Grigio as the aperitif. I would definitely serve Pinot Noir with the Salmon, a classic pairing..
